Job Description
Position Title: Production Manager
Reports to: General Manager
Job Purpose / Objective
The Product Manager is responsible for the full operational management of the manufacturing facility, overseeing the production of gelato, pastries, desserts, and all related product development.
The role ensures that all products are manufactured to SOTTOZERO quality standards while maintaining efficiency, consistency, food safety, and compliance with HACCP regulations. The Product Manager leads the production team, manages orders and schedules, controls inventory, and guarantees smooth coordination between the factory and retail outlets.
This position plays a critical role in ensuring that all outlets receive high quality products on time and in line with company standards.
Manufacturing Operations
- Oversee and manage all daily production activities within the manufacturing facility.
- Ensure the correct and timely production of gelato, pastries, desserts, and other menu items.
- Guarantee that all recipes and preparation methods are strictly followed.
- Monitor production output, product quality, and consistency at all times.
- Coordinate with retail outlets to ensure demand is met accurately and on schedule
- Implement continuous improvement in production processes and efficiency.
Planning and Scheduling
- Prepare weekly and monthly production schedules based on outlet requirements.
- Organize staff shifts and production plans according to operational needs.
- Manage and prioritize incoming orders to meet delivery deadlines.
- Adjust production plans based on seasonal trends and business demand.
Quality Control and Food Safety
- Take full responsibility for hygiene, cleanliness, and food safety standards within the factory.
- Implement and maintain HACCP procedures and documentation.
- Ensure full compliance with all local food safety regulations.
- Conduct regular quality checks on finished products for taste, appearance, and consistency.
- Address and resolve any quality related issues immediately.
Team Leadership and Staff Management
- Lead, train, and supervise the production team.
- Ensure all staff follow SOPs, hygiene rules, and production guidelines.
- Monitor staff performance, attendance, and productivity.
- Promote teamwork, discipline, and a culture of accountability.
- Provide ongoing training and development to factory personnel.
Inventory and Order Management
- Manage stock levels of raw materials and packaging
- Coordinate ingredient orders with procurement to avoid shortages.
- Monitor usage of materials and control wastage.
- Ensure correct storage and rotation of ingredients and finished goods.
- Maintain accurate production and inventory records.
Equipment and Facility Management
- Ensure proper use and maintenance of all production equipment.
- Report technical issues and coordinate servicing when required.
- Maintain organization, cleanliness, and safety within the factory at all times.
- Strong experience in food manufacturing or kitchen production management.
- In depth knowledge of HACCP and food safety standards.
- Proven ability to manage production schedules and teams.
- Strong organizational and planning skills.
- Attention to detail and commitment to product quality.
- Ability to work under pressure and meet strict deadlines.
- Good leadership, communication, and problem solving skills.
- Knowledge of inventory management and production control.
- Good communication skills in English, Maltese and/or Italian considered an advantage.
Working Conditions
- Full time role based within the manufacturing facility.
- Requires flexibility to meet production demands, including early mornings, evenings, weekends, and peak seasons.
- Hands on role involving active participation in daily operations.
- Must be available for extended hours when operationally required.
